WHere is a simplified take on a beverage featured on the seasonal drinks list. This is a party-sized prepared mix that's loaded with flavours associated with Christmas time, making it excellent for hosting a festive gathering. Save the extra cordial for morning drinks, puddings, or for more rounds of the drink.

Yields 10 guests
To make the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Premix (produces 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Directions
For the Citrus Syrup: Place every items in a saucepan, heat until it reaches a gentle boil, stirring to dissolve. Then, remove from the stove and let it to cool down entirely. Transfer to a sealable bottle, seal keeping it chilled, where it will keep for around a month.
Preparing the Cocktail Base: Mix every liquids in a sizeable container, allow it to infuse for 60 minutes, then strain preferably using muslin, to ensure it's completely strained.
For serving: Measure 85ml of the premix to a mixing glass containing ice, and stir lightly for one minute to chill. Strain to a chilled martini glass or similar, garnish with a few cranberries and complete it by giving it a quick spritz with the mandarin essence above the glass.
